My Pad Thai Obsession

I love Pad Thai so much that it’s pretty much what I order when I eat out at a Thai restaurant.  I’ve had bad Pad Thai before and I’ve also had really awesome Pad Thai (in Miami in 2013).  I’m still searching for the perfect Pad Thai here, where I live.  In the mean time, I’ll continue eating whatever Pad Thai I can get my hands on.

Went to Trader Joe’s for the first time and tried their frozen Vegetable and Tofu Pad Thai.  It was okay.  A bit too salty for me and I accidentally overcooked the noodles.

Also tried this package dried version from the Asian market I frequent.  I added mushrooms, spinach, and garnished with bean sprouts.  It was pretty good.

My current favorite is this homemade version with shrimp.  I made it old-fashioned style using ketchup, sweet soy sauce, and oyster sauce.  I added mushrooms, spinach, and bean sprouts as well.  It was a little on the dry side but so delicious!

MB Orchids and My Blog

If you’ve been following me, you’ll notice that I’ve changed my blog name from motherof2andnomore to prettypeonydesigns.  Those who were not following my blog may not have access to my blog anymore.  I didn’t do a redirect and motherof2 no longer can be searched.

Moving on.  It’s been a long time (or feels like it) since I’ve posted any updates on my orchids.  I’m very happy to say that the MB (master bath) white orchid blooms are still going strong.  I also have a new orchid in the master bath.  Husband bought it for me last Mother’s Day.  It hasn’t bloomed again since last year so I’m really excited to see what they’ll look like soon!

Cuban Chicken

CUBANCHICKEN0040_800I tried my hands at making Cuban chicken and it turned out pretty good.  I first had it during the family cruise last year to the Bahamas and totally fell in love with it.  I found a recipe online but it required way too many ingredients and I remembered the flavors to be very simple yet very delicious.

It was simple to make.  For the spices, I basically used cumin, paprika, cayenne (for heat so just a pinch or two), black pepper, bay leaf, and salt.  I’ll tweak it some more before sharing a recipe.  If you want the recipe I found online (and have not tried yet), it is here.
